These rolls, a variation of the Sweet Potato Garlic Knots from Tasty Kitchen members Neil and Jessica, were so fun and easy to make. I loved that you could use pumpkin puree or sweet potato puree and how well they fit in to a holiday dinner. And they’re beautiful, too!

To make them you will need: warm water, active dry yeast, honey or agave nectar, olive oil, sweet potato or pumpkin puree, flour and salt. If you want to make the original version, you’ll need some garlic, too.

Place them on a pizza stone if you have one, so they become crispy on the outside, and bake for 10-15 minutes until they are golden brown.

When they are ready, you can brush them with olive oil. If making garlic knots, brush with a mixture of olive oil and minced garlic.

Description

Easy Sweet Potato Garlic Knots.

Ingredients

  • 1 cup Warm Water
  • 1 envelope (7g Envelope) Active Dry Yeast
  • 2 Tablespoons Honey Or Agave Nectar
  • 2 Tablespoons Olive Oil,, Plus More To Oil The Bowl
  • ½ cups Sweet Potato Puree (fresh Or Canned)
  • 3-½ cups Unbleached Bread Flour
  • 1-½ teaspoon Coarse Kosher Salt
  • Minced Garlic And Olive Oil, To Brush On Baked Knots

Preparation Instructions

Note: To make sweet potato puree, wash and peel sweet potato and cut into 1-inch squares. Place in a large pot and add enough water to cover. Bring to a boil over high heat and boil for 20-25 minutes or until soft. Remove from heat and drain into a colander and return to the pot. Mash and allow them to sit while you prepare your other ingredients.

1. Pour warm water into a medium bowl and slowly whisk in yeast. Let sit for 10 minutes, then add honey, olive oil and mashed sweet potato. Whisk until thoroughly combined and smooth.
2. In a separate bowl, mix flour and salt. Slowly stir in wet ingredients and continue to stir until it becomes impossible to stir more. Then use your hands to continue mixing and slowly start kneading your dough, adding more flour to your hands to keep it from sticking.
3. Once you’ve created your dough ball, add olive oil to the bottom of your bowl and roll the dough ball in it until it is coated. Cover with Saran wrap or a damp towel and store in a dry place (I use my microwave) for two hours.
4. Around the last 15-minute mark, preheat your oven to 425 degrees. Divide your dough into pieces you can easily hold in your fist and roll them into long strips around 8 or 9-inches long. Don’t worry if they’re skinny, they’ll still get fat when they bake. Tie each into a knot, tuck the edges under each side, then place each on the pizza stone.
5. Bake until golden, around 10-15 minutes. Brush with minced garlic and olive oil immediately after removing from oven. Allow to cool 3-5 minutes.

As soon as autumn hits, my craving for sweet potatoes sets in. I will eat them any way them come, whether mashed, baked, twice-baked or roasted. So, when I saw “sweet potato” in the title of these Sweet Potato Tuna Patties by Tasty Kitchen member Olivia, my curiosity was piqued. In fact, I ran straight out to the store to buy the ingredients.

If you’ve ever had tuna or salmon patties, be prepared for the tuna patty that will spoil you forever. From the natural sweetness of the potatoes to the zing of the chili powder, this is a recipe that you will want to make over and over again.

If you have leftovers, store them in an airtight container in the refrigerator, then reheat in a 350ºF oven when ready to eat.

Chop the sweet potatoes and boil them until tender when pierced with a fork, about 10 to 15 minutes. Drain and run them under cold water. This will stop them from cooking further and will cool the mixture down so that the eggs don’t cook when added. That wouldn’t be pretty!

Using your hands, shape the mixture into patties. You could make mini ones for appetizer-sized patties, or larger ones for a dinner portion. I made my patties about 1/2 inch thick each and a few inches wide. Perfect for dinnertime!

Description

These Sweet Potato Tuna Patties are very soft inside and crisp on the outside. It is a delicious, easy, quick and healthy appetizer recipe!

Ingredients

  • 2  Medium-sized Sweet Potatoes, Peeled And Sliced Into Chunks
  • 2 cans (180 Gram Size) Chunked Tuna In Water, Drained And Flaked
  • ½ cups Chopped Green Onions
  • ½ cups Gluten-free Breadcrumbs
  • 2 whole Eggs
  • ½ cups Diced Red Onions
  • 1-½ cup Diced Yellow Pepper
  • ½ teaspoons Garlic Powder
  • ¼ teaspoons Chili Pepper
  • Salt And Pepper For Taste
  • Olive Oil Cooking Spray

Preparation Instructions

Fill a medium pan halfway full of water. Bring water to a boil and add sweet potatoes. Cook them for about 10-15 minutes or until tender. Drain and run them under cold running water. Transfer to a large bowl and mash with a fork.

Add the tuna, green onions, breadcrumbs, eggs, red onions, yellow pepper, garlic powder, chili pepper, salt and pepper. Mix well until the all ingredients are combined. Use your hands to shape mixture into your preferred size patties.

Heat a non-stick frying pan over medium-high heat and add cooking spray. Cook patties for 3 minutes per side or until golden brown.

“And in the morning, I’m makin’ waffles!”

That is probably my favorite line from the movie Shrek, because I get just as excited as Donkey does about breakfast—and waffles. My husband works nights, so breakfast on the weekends, when he is getting off shift and I am just waking up, is a special time for us to spend together. I like making us a special breakfast, and usually it’s pancakes or waffles. I made these Sweet Potato Waffles from TK member Carolina Heartstrings one morning and these were perfect for my breakfast and his dinner.

These require just a few basic ingredients that you probably already have on hand.

The most time-consuming part may be roasting the sweet potatoes, so I suggest doing that beforehand to save some time when you make these Saturday morning. Or, see if your local store has canned sweet potatoes. Or substitute pumpkin! Either way, these are a win.

Description

We are celebrating the sweet potato crop here in North Carolina with a month of delicious recipes. What better way to begin the month than with one of my favorite breakfast foods: waffles! This recipe is easy and tastes so good on a cool fall morning or when you decide to have breakfast for dinner. Drizzle maple syrup and pecans over the top and dig in!

Ingredients

  • 1-¾ cup Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 teaspoon Cinnamon
  • ½ teaspoons Ground Cloves
  • ½ teaspoons Ground Nutmeg
  • 3 whole Eggs
  • 1-¾ cup Milk
  • 1 Tablespoon Sugar
  • ½ cups Vegetable Oil
  • ½ teaspoons Vanilla Extract
  • ½ cups Sweet Potato Puree (see Directions Below)

Preparation Instructions

Note: I like to make my own sweet potato puree. Take two medium sweet potatoes, peel them and cut into chunks. Cook on medium heat until soft. Drain and put in a food processor until they are of puree consistency.

Sift together flour, baking powder, salt, cinnamon, cloves and nutmeg. Beat eggs thoroughly and whisk milk, sugar, oil and vanilla into beaten eggs. Add the egg mixture to dry ingredients. Mix gently to combine. Add sweet potato puree. Mix gently. Batter will be lumpy.

Preheat your waffle iron, spray if needed. Ladle 1/2 to 3/4 cup batter into the waffle iron. Cook until the waffle is golden brown. Makes 4 to 6 waffles.

I’m a sucker for anything with pulled pork. When I first stumbled onto this recipe for Sweet Pulled Pork Tacos with Avocado Cream Sauce from TK member 4littlefergusons, my heart literally skipped a beat. Pulled pork tacos with an avocado cream sauce? Heck yes! As the self-proclaimed queen of all things avocado I knew that I had to try this recipe immediately.

I whipped up these tacos and avocado sauce for a girls night in a few weeks ago and every single person gobbled them up. There were even leftovers that my fiancé devoured the next day. Basically, here’s the bottom line: you need these tacos in your life asap!

Cube up a piece of pork butt/shoulder. You can cut off some of the excess fat and then trim the pieces into 1 ½ inch pieces. Add the pork to the slow cooker and turn it on. You can forget about the pork for a few hours while it does its thing. And trust me, it’s going to be delicious.

Mash everything together until you have a creamy consistency and then set the sauce aside. If you are going to be eating in a few hours, cover the sauce with a piece of plastic wrap and refrigerate it.

Once the pork is done, take a few spoonfuls and place them into a warmed corn tortilla. Throw in a few cherry tomatoes for good measure and then top it with as much avocado cream sauce as you want. Serve it up and prepare to be wowed!

Description

If you like cilantro, this is the dinner for you! Fresh, easy and oh-so delicious!

Ingredients

  • FOR THE SWEET PULLED PORK:
  • 2 cups Your Favorite Salsa
  • 4 ounces, weight Canned Green Chilies
  • ¼ cups Packed Brown Sugar
  • 15 ounces, weight Black Beans, Rinsed And Drained
  • 3 pounds Pork Shoulder Roast (or Loin Roast Is Fine, Just Pricer)
  • Kosher Salt
  • FOR THE AVOCADO CREAM SAUCE:
  • 4 whole Green Onions, Sliced
  • 2 whole Avocados
  • 4 Tablespoons Lime Juice
  • 2 Tablespoons Sour Cream
  • ¼ cups Snipped Cilantro
  • 4 cloves Minced Garlic
  • 1 teaspoon Kosher Salt
  • FOR THE TOPPINGS:
  • Stand And Stuff Taco Shells
  • Shredded Lettuce
  • 4 whole Green Onions, Sliced
  • Cherry Tomatoes, To Serve

Preparation Instructions

For the pulled pork, in the bottom of a large crock pot, mix salsa, green chilies, brown sugar and black beans. Add the pork roast (salted with Kosher salt) and cook on low for 6-8 hours or high for 4-6 hours. Take the meat out of the crockpot and shred with 2 forks. Return to the pot and mix with the sauce and beans. Leave the lid off as you continue making supper to cook away some of the juices.

To make the avocado cream sauce, slice green onions and mash the avocados. Add lime, sour cream, snipped cilantro, garlic and salt.

To serve, scoop sweet pork into a baked hard shell. Top with a dollop of avocado cream sauce and shredded lettuce and green onions. Serve with cherry tomatoes on the side.

Dig into these fresh, easy, delicious tacos! Yum!

Note: My only complaint was that if I made 2 tacos at the same time, the second taco shell got soggy while it waited. Just an FYI, not a deal breaker!
