We’re so happy to have our good friend Alice back on the Tasty Kitchen Blog. She couldn’t have picked a more delicious recipe to prepare than Chrissy and Lauren’s Rocky Road Rice Krispie Treats. Great to see you, Alice!

Just when I thought I had seen every variation of Rice Krispie treats, Tasty Kitchen members Chrissy/Lauren (Chrissy and Lauren of From the Yellow Kitchen) delightfully prove me wrong with their fun and creative Rocky Road Rice Krispie Treats made with chocolate, Nutella, peanut butter, marshmallows, pecans, and rice cereal. These bars are a chocolate lover’s best friend, especially since no baking is required and they only take minutes to prepare. For the record, I’m partial to these types of recipes because of the “easy factor” with a huge chocolate payoff. Who is with me?!

First you’ll need the following ingredients: chocolate chips, peanut butter, Nutella, mini marshmallows, pecans, and Rice Krispies. The recipe calls for semi-sweet chocolate, but you could easily substitute milk bittersweet, or dark chocolate depending on your personal preferences.

Mix the chocolate chips, peanut butter, and Nutella together in a microwave safe bowl. Heat the mixture in the microwave by cooking it in 30-second intervals, making sure to stir the mixture immediately after every interval until the chocolate chips have melted and the mixture is completely smooth.

Stir in the pecans, marshmallows, and rice cereal until all the ingredients are well coated with chocolate.

I added an additional cup of cereal to mine because I thought it could use a bit more. Use your own judgment in deciding to add more cereal, pecans, or marshmallows.

Transfer the mixture to an 8×8 pan or small baking dish coated in non-stick spray.

Place the pan in the refrigerator for one hour before cutting into squares. Tip: Forty minutes in the freezer works nicely, too!

The texture on these bars is not like a traditional rice cereal treat. It is more on par with a yummy chocolate bar somewhere between fudge and a haystack. I would also recommend allowing the chocolate mixture to cool to room temperature before adding marshmallows, otherwise they melt and you don’t get those gorgeous (whole) marshmallow chunks in the middle of each bar.

My suggestions and tips are slightly different than the original recipe (based on my preferences). The original recipe is a good base which can easily handle more amounts of the listed ingredients based on your own personal preferences. Description

All the ingredients for a sweet and crispy Rocky Road treat with a little peanut butter and Nutella to top it all off.

Ingredients

  • 1 cup Semi-Sweet Chocolate Chips
  • ½ cups Peanut Butter
  • ½ cups Nutella
  • ½ cups Mini Marshmallows
  • ¼ cups Pecans
  • ¾ cups Rice Krispies

Preparation Instructions

Melt the chocolate chips, peanut butter and nutella for 2 minutes in the microwave. Stir.

Mix in the marshmallows and pecans. Fold in the Rice Krispies.

Pour mixture into a well-greased 8×8 glass baking dish. Refrigerate for 1 hour.

Optional: top with extra pecan pieces and marshmallows.

I’m not going to pretend I know all about Mardi Gras, because honestly, if you think you know little about it, I know even less. All I can muster from the top of my head is New Orleans. And beans. Or was that beads?

See? I know nothing.

Okay, maybe I know a little bit. For example, I know New Orleans cuisine features a lot of seafood: shrimp, mussels, crawfish … and boy, do they know how to dish them up.

If you’re more of a carnivorous kind of reveler, no worries. You can still get that cajun feel with a spectacularly flavorful (trust me, it’s spectacular—I speaketh from often-repeated experience) Cajun Meatloaf from DetzelPretzel, a.k.a. Pastor Ryan. Or plate up some of kiki00star’s Cajun Pork Chops on a bed of rice and beans.

You can also opt for something more casual and go with sandwiches. The muffuletta is a New Orleans invention named after the Sicilian bread traditionally used to make the sandwich. It’s bursting with rich flavors: sliced meat, olives, capers, olive oil, vinegar, and all sorts of good things. In fact, it’s so good that you can even make a meatless version and never miss the meat. Or you can go a different way and fry up some catfish and put it in a sandwich with some creole mustard.

If pasta is your carb of choice, we’ve got some great New Orleans-inspired pasta dishes here, too. You can choose from lobster, crawfish, chicken, or just stick with a great sauce mixed with plain pasta.

Of course, you can also go old-school and make jambalaya. Or gumbo. Or étouffée. Or chowder. Classic dishes that are wonderfully hearty, and a great choice for the not-quite-spring-yet temperatures out there.

And finally, no celebration would be complete without King Cake. King Cake is typically a ring of bread and colored purple, green and gold, and there are many different variations out there. This variation, Chocolate Ganache King Cake Rolls from mommahen, had me at chocolate.

Oh my. I don’t know where to start. They all look so good!

When we started doing theme posts here at Tasty Kitchen, one of our first themes was pancakes. Today, almost a year later, I’m still dreaming of those Carrot Cake Pancakes from multiplydelicious. And okay, also those incredible Cinnamon Bun Pancakes from sapeylissy.

Since then, you’ve been sharing so many more delicious-looking pancake recipes with us and we just had to show you more of this breakfast wonder. Because we love you, because it’s Tuesday, and because I’m fa… never mind.

Let’s start with some basic recipes, shall we?

I love pancakes and I’d gladly enjoy them any time of the day. Remember that Cranberry Butter we featured here some weeks ago? Amazing on pancakes, too. Trust me on this.

Feeling a bit under the weather? Chicken soup will fix ya. At least, that’s what my mom says. Whenever I was down with a cold or just feeling achy all over, she’d make a nice pot of chicken and rice soup and nurse me back to health. Whether you swear by the curative powers of chicken soup or not, it’s hard to deny the comfort you get from a nice bowl of this simple yet flavorful soup, particularly if your mommy is sitting by your bed feeding you by the spoonful.

Moms are great like that. They can pretty much fix anything.

Rumor has it that lots of folks could use some old-fashioned comforting these days. Maybe you caught some bug from someone at work or in school, or maybe it’s just a case of too much winter already. Whatever it is, we’re here to help. And in true Tasty Kitchen style, we’re showing you a number of different ways to change up this tried-and-true classic.

You can even go across the border, borrow a few Tex-Mex flavors, and jazz up that pot of soup. Sometimes, the added spice can really perk you up inside, and many herbs and spices are touted to have additional anti-inflammatory properties. Plus, you get chips in your soup. Just the thought of it makes me feel better already.

Perhaps you’d rather travel over into the Mediterranean, where chicken soup commonly made with lemon (vitamin C!) and egg. Or you can add some beans to boost the protein content. I actually like soup with beans the day after, when some of the beans have dissolved into the soup, making it rich and creamy.

Finally, we can go clear across to the other side of the world, where they have everything from simple chicken soup with greens and ginger to Thailand’s classic chicken soup with coconut milk and lemongrass, one of my personal favorites. That is, until I spied ericalea’s Coconut & Chicken Curry Soup, which looks like it could become my new favorite.
