How was everyone’s holiday? Good? Stuffed? Voices hoarse from all the talking and laughing and football cheering? Have tons of leftovers and don’t know what to do with them?

In case you’re looking for ideas, here are two that caught our eye. They both call for turkey deli meat, but who says you can’t use some of that great roasted turkey you have?

First is Faith’s Satay-Inspired Turkey Grilled Cheese with Nutty Masala Sauce. This sandwich gives your turkey a completely different flavor profile with its earthy flavors. I think the peanut butter is a nice touch and a little cranberry sauce on the side won’t hurt. Or you can grab your leftover turkey meat and vegetables and make Megan’s Cheesy Roast Turkey and Veggie Panini. Her recipe calls for spinach but I don’t see why you can’t throw in some broccoli rabe or even Brussels sprouts in there if you have any left over.

Description

The Nutty Masala Sauce I made for this sandwich was inspired by satay sauce, but has butternut squash puree for a fun twist. It’s amazing on this sandwich, but I’m sure you can think of at least 10 other uses for it off the top of your head (it’s amazing even eaten off a spoon).

Ingredients

  • FOR THE SAUCE:
  • 2 Tablespoons Creamy Peanut Butter
  • 2 Tablespoons Butternut Squash Puree (See Note)
  • ½ Tablespoons Honey
  • ½ Tablespoons Rice Vinegar Or Apple Cider Vinegar
  • 1 teaspoon Light Soy Sauce
  • ¼ teaspoons Garlic Powder
  • ¼ teaspoons Ginger Powder
  • ⅛ teaspoons Garam Masala Spice Mix
  • ⅛ teaspoons Crushed Red Pepper Flakes
  • Salt To Taste
  • FOR THE SANDWICHES:
  • 8 slices Your Favorite Bread
  • 8 teaspoons Butter
  • 4 teaspoons Sesame Seeds
  • ½ pounds Oven-roasted, Thinly Sliced Turkey Deli Meat
  • 1 whole Medium Red Bell Pepper, Quartered, Seeded, And Thinly Sliced
  • 4 ounces, weight Mozzarella Cheese, Shredded
  • 2 whole Scallions, White And Green Parts, Thinly Sliced, For Garnish

Preparation Instructions

1. Use a fork to stir together all ingredients for the Nutty Masala Sauce in a medium bowl. Taste and add salt as desired. Set aside for now.
2. For the sandwiches, spread 1 teaspoon of butter on 1 side of each slice of bread. Then sprinkle 1/2 teaspoon sesame seeds onto the buttered side of each bread slice, gently pressing the seeds in.
3. Lay 4 bread slices onto your work surface with the butter/sesame side facing down. Spread some of the sauce onto the bread and top with the turkey, red bell pepper and mozzarella. Place the remaining slices of bread on top of the cheese with the butter/sesame side facing up.
4. Preheat a large nonstick skillet over medium-low heat. Once hot, carefully add the sandwiches and cook until the cheese is melted and the bread is golden, flipping once. It should take about 4 minutes per side (you can turn the heat up or down as necessary).
5. To serve, transfer the sandwiches to serving plates and sprinkle on the scallions.

Notes:
– Butternut squash puree: This is super easy to make; however, if you don’t have time to whip up a batch, canned pumpkin will also work. If you’re using canned pumpkin, look for solid-pack pumpkin, not pumpkin pie filling (which has spices and sweeteners).

Description

Take a bite of this crispy and totally cheesy roast turkey and veggie panini for those chilly fall nights. It’s even better with a side of completely creamy tomato soup.

Ingredients

  • 2 Tablespoons Butter
  • 1 whole Onion, Sliced And Caramelized
  • 4 slices Hearty Garlic Artisan Bread
  • 3 Tablespoons Mayonnaise
  • 1 Tablespoon Dijon Mustard
  • ½ pounds Roasted Turkey Sliced Lunchmeat
  • 1 whole Tomato, Thinly Sliced
  • 1 cup Spinach
  • 4 slices Cheddar Cheese

Preparation Instructions

To caramelize onions, preheat a skillet over medium-high heat. Add in butter and allow to melt and start to simmer. Add in thinly sliced onion and toss to coat in butter. Let simmer and stir occasionally until the onions turn golden brown and reduce down. Remove from skillet.

For the paninis, preheat panini maker to 375ºF. (If you don’t have a panini press, make this like a grilled cheese—it’s fantastic!)

Top slices of bread with mayonnaise and mustard. Top slice of bread with turkey, tomato, caramelized onion, spinach and then cheese. Top with another slice of bread.

Spray panini press with nonstick spray and press until bread is golden brown and the cheese has melted inside. Remove from press, slice and serve.

We know most of you pretty much have your entire menu set for tomorrow, and bravo! That means you get to avoid the supermarkets today.

But some of you might have suddenly found yourselves in a bind. Maybe a guest who was assigned to bring a dish suddenly cancelled, or surprise! Your planned host can’t do it after all and now everyone’s gathering at your place. (Yikes!) Or maybe you’re a great planner and organizer and you actually have time to make an extra dish or two for tomorrow.

Our TK members have been so wonderful sharing their holiday recipes with us and we want to make sure you get a chance to see them before tomorrow. If you’re like me, anything that ends with ‘pizza’ is pretty much the best thing ever. I’m obsessed to say the least! So when I ran across this Jalapeno Popper Pizza from Dax Phillips over on Tasty Kitchen, I knew it was destined to be in my future!

This tastes just like one of those insanely addictive jalapeno poppers, but it’s on a pizza! A pizza, you guys! It’s going to rock your world—and all of your tailgate parties from here on out!

Description

Everything you want and expect in a great jalapeño popper, but turned into a pizza.

Ingredients

  • FOR THE PIZZA DOUGH:
  • 3-¾ cups Bread Flour
  • 2-½ teaspoons Active Dry Yeast
  • ¾ teaspoons Table Salt
  • ¾ teaspoons Sugar
  • 1-⅓ cup Room Temperature Water
  • FOR THE PIZZA:
  • 1 whole Pizza Dough, Shaped Into Your Desired Circumference And Thickness
  • 6 ounces, weight Cream Cheese, Room Temperature
  • ½ cups Shredded Cheddar Cheese
  • 1 cup Shredded Mozzarella Cheese
  • 2 whole Jalapeño Peppers, Roasted, Skins Peeled And Discarded, Sliced
  • 1 whole Pizza Stone, Optional

Preparation Instructions

Note: The pizza dough recipe makes enough for 3 large sized pizzas. The toppings in the above list are enough for only one pizza.

For the dough:
In a large bowl combine the flour, yeast, salt, and sugar. Mix. Add the water, and with your wooden spoons, or hands, mix until blended. I use my KitchenAid mixer for this process to keep everything in the bowl during the rising process. Mix for about 30 seconds. The dough should be a bit stiff. Cover the bowl with a towel, and let it sit at room temperature until the dough has doubled in volume, about 2 hours.

Once risen, divide dough into three portions. Add a sprinkling of flour to a large pastry board and put one of the dough portions on top. Start rolling it out into your desired pizza shape. If you are adventurous, try tossing the pizza, to get your desired thickness.

Preheat your oven to 500 F with the pizza stone inside.

When oven is preheated carefully place the shaped pizza dough into the oven on the preheated pizza stone, and bake for about 10 minutes.

Remove the pizza stone from the oven, then smear the cream cheese over the top of the crust, leaving about an inch border. Top with the cheddar cheese and the mozzarella cheese, then arrange the sliced jalapeño peppers over the top.

Place it back into the oven for an additional 15 minutes or until the crust is nice and golden and the cheese is fully melted.

Remove it from the oven and let it cool for about 5 minutes before slicing into it, then dig in.

When you first bite into it, you get that surprise from the cream cheese base, and it has that richness to it. But when you get that paired with the roasted jalapeño peppers, well, then it all comes together. This is a real treat, and one slice will do you just fine. Hope you enjoy.

Let me start by saying this: Put me in a room and, in all likelihood, I will be the least crafty person in that room. And by crafty, I don’t mean slick or clever or sly, though that applies too. No, I mean Martha Stewart, Ina Garten, Katie Brown kind of crafty. My talent for finding innovative ways to use ordinary things does not extend beyond the usual MacGyver kind of application. Give me a handful of eucalyptus branches and I’m more likely to whittle them into arrowheads or door shims than arrange them in a pretty slender vase on a foyer table.

This week, I hope to bring together those like me with those of you who actually own slender vases and foyer tables. Although we’ll be talking about something that isn’t quite part of the meal, a well-presented table can still play a big role in bringing it all together. So our Kitchen Talk question this week is:

Do you have any tips to share for setting a beautiful table?

The holidays are coming up and I know we could all use some new ideas for making our beloved guests extra special even before the food emerges from kitchen and onto the dinner table.

As mentioned earlier, I have close to zero talent for setting a nice table, so my tips will be very basic. I like using chargers because I think they frame the plate nicely, and they help save space around the table when used in lieu of placemats. I also think pretty cloth napkins with a simple napkin holder are always a nice touch, along with cute place cards.

Nanci likes to go out into the garden and trim some branches with bright red berries and dark green foliage, or whatever is in season. Then she pops them into a nice vase.

Betsy shares, “Our mom used to bring in leaves from our magnolia tree, and arrange them around pretty white candles. Loved that!” She also likes doing a bunch of different colors and/or patterns of cloth napkins. Betsy loves color!

Ree loves color, too, and she prefers to rebel against all the earth tones associated with Thanksgiving and throw in purples, blues, and even bright pinks. “All the Thanksgiving food is very brown and, well, food-colored. Blues and purples are unexpected contrasts!”
