Description

A quick, easy and healthy salad that is always a crowd pleaser! It makes great leftovers too!

Ingredients

  • FOR THE SALAD:
  • 1-¼ cup Water
  • 1 cup Uncooked Whole Wheat Couscous
  • ½ cups Red Onion, Diced
  • 1-½ cup Cucumber, Chopped
  • 1-½ cup Tomatoes, Chopped
  • ¾ cups Reduced-fat Feta Cheese
  • 3 Tablespoons Italian Seasoning
  • 3 Tablespoons Fresh Basil, Sliced
  • 1 teaspoon Garlic Powder
  • Salt/pepper To Taste
  • FOR THE DRESSING:
  • ¼ cups White Wine Vinegar
  • 4 teaspoons Fresh Lemon Juice
  • 2 Tablespoons Granulated Sugar
  • 2 Tablespoons Balsamic Vinegar

Preparation

1. In a medium sized saucepan, bring the water to a boil
2. Once the water is boiling, add the couscous, put the lid on and remove from the heat.
3. While your couscous sits, prep the veggies if you haven’t already.
4. In a small microwave safe bowl, whisk together the white wine vinegar and lemon juice. Pop it in the microwave and heat for 10-15 seconds until warm.
5. Add the sugar into the warm lemon juice mixture, and stir until dissolved. Set aside,
6. Remove the lid from the pot, and fluff the couscous with a fork. Transfer it into a large bowl.
7. Add the chopped veggies to the couscous, along with the feta cheese, Italian seasoning, basil and garlic powder.
8. Mix until everything is combined and the Italian seasoning has been dispersed evenly.
9. Pour the white wine vinegar mixture over the couscous and mix well.
10. Season with a good amount of salt and black pepper.
11. Drizzle balsamic vinegar over the top and serve.

NOTES
This is great served warm or cold!
