Description

Festive pomegranate couscous salad with pearl couscous, pomegranate seeds, pistachios, parsley, mint, scallions, lemon-ginger dressing. Deliciously easy.

Ingredients

  • 3 cups Water, Plus A Pinch Of Salt
  • 2 cups Pearl Couscous (You Can Substitute Regular Couscous Or Quinoa)
  • 4  Scallions (green Onions). Sliced, Including The Green Parts
  • 2 cups Flat Leaf Italian Parsley, Roughly Chopped
  • ½ cups Fresh Mint Leaves, Chopped
  • 1-½ cup Pomegranate Seeds
  • ½ cups Pistachios (unsalted Preferred)
  • FOR THE DRESSING:
  • 1 cup Lemon Juice
  • 2 teaspoons Ginger Root, Minced Or Grated
  • ½ teaspoons Salt (optional)
  • ½ teaspoons Red Chili Flakes
  • ¼ teaspoons Ground Black Pepper

Preparation

Add water plus a pinch of salt to a medium saucepan and bring it to a boil. Add rinsed couscous, stir, reduce the heat and cover. Allow couscous to simmer until liquid is absorbed, 15 minutes. For best results, follow the package instructions.

While couscous is cooking, prepare dressing by combining ingredients in a small bowl. Set aside.

In a medium salad bowl, add pomegranate seeds, green onions, parsley, mint, and pistachios.

Once couscous is done, allow it to cool. I find it easiest to transfer it to a small mixing bowl and stir it a few times. Once it has cooled a bit, add the dressing to the couscous and mix well. Add couscous to the rest of the salad ingredients and mix well.
