Description

How about a cool, creamy alternative to potato salad that has 71% fewer calories and 67% less fat!

Ingredients

  • ⅓ cups Light Sour Cream
  • ⅓ cups Light Mayonnaise
  • 2 Tablespoons Chopped Fresh Dill
  • 1 clove Garlic, Finely Minced
  • ½ whole Lemon, Zest And Juice Only
  • ½ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • ⅛ teaspoons Celery Seeds, Crushed
  • 1 whole English Cucumber, Sliced (about 2 Cups)
  • 2 whole Carrots, Peeled And Sliced (about 1 Cup)
  • 8 whole Radishes, Sliced (about 1 Cup)
  • 2 whole Scallions, Diced

Preparation

Mix sour cream, mayonnaise, dill, garlic, lemon zest, lemon juice, salt, pepper and celery seeds in a large bowl until creamy. Add vegetables and mix until evenly coated.

Refrigerate for 30 minutes to allow flavors to develop. Then serve immediately.

Delicious! This is a great side dish for a summer day. Loved the combination of radish, cuke and carrot.

I LOVED this … the sauce is especially good and I will try and find other veggies to use it on. DH and DS were lukewarm on it because neither loves cukes, but oh well. I didn’t have carrots, but did have white radishes so included them with the red. I also used regular sour cream and mayo instead of light. Yum.
