Description

When I think of warm spring weather, I think of a salad with tender baby spinach and fresh sweet strawberries. These super foods are delicious and nutritious. My version has feta cheese, which is lower in fat and calories than many cheeses and has an intense flavor meaning a smaller portion is satisfying. My light and creamy poppy seed dressing is much healthier than store bought versions which are filled with oil and sugar.

Ingredients

  • 2 Tablespoons Orange Juice
  • 2 Tablespoons Champagne Or White Wine Vinegar
  • 3 Tablespoons Olive Oil Mayonnaise
  • 3 Tablespoons Fat Free Greek Yogurt
  • 1 Tablespoon Honey
  • 1 teaspoon Grated Onion
  • 1 Tablespoon Fat Free Milk, If Needed
  • 1 Tablespoon Poppy Seeds
  • 1 teaspoon Orange, Zest Grated
  • 5 ounces, weight Fresh Baby Spinach
  • 1 cup Fresh Strawberries, Sliced
  • ¼ cups Slivered Almonds, Toasted
  • 2 ounces, weight Crumbled Feta Cheese

Preparation

In a blender, combine orange juice, vinegar, mayonnaise, yogurt, honey and onion. Puree until smooth. Add the milk to adjust the consistency if it needs to be thinned. Stir in the poppy seeds and orange zest. Refrigerate until ready to use. Makes 1 cup of dressing. Use 2 tablespoons per salad and keep the rest refrigerated.

Combine the spinach, strawberries, nuts and cheese in a large bowl then dish it out into two serving bowls. Drizzle with 2 tablespoons of dressing per salad. Enjoy!
