Salmon with Savory Blueberry Sauce

Description

I call this my “super-food supper” as it combines three of the top super-foods (salmon, spinach and blueberries) in a quick and simple dish! Blueberries are very high in antioxidants and have just the right mix of sweetness and acidity, so that they’re terrific in both sweet and savory dishes. The intense flavor of the sauce makes it a perfect accompaniment for salmon and will transform even those who are not “fish fanatics”.

Ingredients

  • 1 Tablespoon Olive Oil
  • ½ cups Shallots, Chopped
  • 1 clove Garlic, Minced
  • 1-½ cup Fresh Blueberries
  • ¼ cups Water
  • 1 Tablespoon Balsamic Vinegar
  • ½ teaspoons Chopped Fresh Thyme
  • 1 pinch Salt
  • Grill Spray
  • 4 whole Salmon Fillets (4 Ounces Each)
  • 6 cups Fresh Spinach
  • 2 Tablespoons Low Sodium Chicken Or Vegetable Broth

Preparation

Preheat the grill on medium- high heat.

In a medium saucepan, heat the olive oil over medium heat. Add the shallots and sauté for 3 minutes. Add the garlic and cook for another minute. Add the blueberries and water. Stir and cook for 2-3 minutes. Add the vinegar, thyme and salt and cook another minute to combine. Set aside.

Spray the preheated grill with grill spray. Grill the salmon for 4-5 minutes per side, until just opaque in the center. Remove it from the grill to a clean plate.

Combine the spinach and broth in a sauté pan over medium heat and cook for 1 minute until just wilted.

Spoon the spinach on each of 4 plates. Top with grilled salmon and blueberry sauce. Serve warm.
