Description

This pasta salad is my all-time favorite. The blend of mozzarella, artichoke hearts and tomatoes is delicious. Serve it at your next party or barbeque.

Ingredients

  • 8 ounces, weight Rotini Or Ziti Pasta
  • 2 cups Broccoli Florets
  • 1 pint Grape Or Cherry Tomatoes, Sliced
  • 1 cup Frozen Peas, Rinsed And Drained
  • 1 can (14 Oz. Can) Artichoke Hearts, Drained And Chopped
  • 1 can (4.5 Oz. Can) Sliced Black Olives, Drained
  • 8 ounces, weight Mozzarella Cheese, Cubed
  • ½ cups Parmesan Cheese, Freshly Grated
  • 1 Tablespoon Fresh Basil, Chopped
  • 1 cup (or More) Bernstein's Cheese Garlic Salad Dressing
  • Salt And Pepper, to taste

Preparation

Cook pasta according to package directions, adding broccoli to the boiling water for the final two minutes. Drain and rinse with cool water. In a large bowl, combine all ingredients, toss with dressing and season with salt and pepper. Serve immediately. Enjoy!

Oh my – this is AWESOME!! The only thing I changed was I used Aldi’s Light & Fit Italian Dressing and then added my own garlic. Light – refreshing – and PERFECT!
