Description

I make this dish often because everyone likes it, even my pickiest eater. I tell my kids that Cowboy Chow is what cowboys eat while out on the range (wink).

Ingredients

  • 9 whole Chicken Tenders, Or 4-5 Chicken Breasts
  • 1 cup Barbeque Sauce
  • 1 cup Salsa
  • 1 can (15.25 Oz. Size) Corn, Drained
  • 1 can (15 Oz. Size) Black Beans, Rinsed And Drained
  • 1 can (15 Oz. Size) Pork And Beans

Preparation

Put all ingredients in a crock pot on low (my chicken is usually frozen). Cook on low all day. Stir and cut up chicken after it has cooked. Serve over brown rice if you want to be really healthy, or serve over Fritos (my favorite). Sprinkle with cheese, sour cream, olives, tomatoes, green onions etc. Enjoy!

This is definitely a new family favourite! So easy, so good. And something a ‘little different’ than just another taco mixture. The combination of ingredients, which admittedly I was skeptical about, creates an amazing burst of flavour that is at the same time sweet, tangy, and spicy, with a little Yee-Haw thrown in for good measure. This is Toddler-Approved goodness, and hubby asked me to make this part of our regular rotation. Absolutely, my dear. [sidenote: because I am mildly obsessed with mixing veggies into everything, I added chopped bell peppers, carrots, and onions, but did not tinker with the sauce by adding any spices]

This is just the most simple crockpot recipe ever! And delicious! You can spice it up as much as you want or each individual person can spice up their own serving to their liking. My hubby says he will add jalapeños and hot sauce to his, but my brother and I thought it was perfect just the way I made it. I did read other reviews before making and decided to add 1 teaspoon cumin and 2 teaspoons of chili powder. I used a medium spiced salsa and Sweet Baby Ray’s Honey Chipotle barbecue sauce. We served it over white rice, crunched up Fritos, shredded cheese, and lite sour cream. Because I started the crock pot around noon, I cut the boneless, skinless chicken breasts into large chunks and cooked on high for about 5.5 hours. I think it was probably done after about 3 hours. No ill effects from cooking it longer. Awesome, awesome recipe. This may truly become my favorite go to crock pot recipe! Thank you so much!
