Description

Even though you need to do a lot of waiting for this side dish, it is well worth it! I grew up on this stuff and it is simple, delicious food. Perfect for summer BBQs or picnics!

Ingredients

  • 12 whole Idaho Potatoes
  • ⅓ cups Cold Water
  • ⅓ cups White Vinegar
  • 1-½ Tablespoon Salt
  • ½ teaspoons Freshly Ground Pepper
  • 2 Tablespoons Granulated Sugar
  • 1 Tablespoon Dried Parsley Flakes
  • ½ whole Large Yellow Onion, Diced Finely
  • 5 stalks Celery, Washed And Diced
  • 1-¼ cup Good Quality Real Mayonnaise

Preparation

Boil (whole) potatoes until soft; a knife should be able to be inserted easily, about 45 minutes. Drain potatoes and let cool 20 minutes or so. In a large bowl, combine water, vinegar, salt, pepper, sugar, parsley, onion and celery together. Set aside. Peel warm potatoes (skin should come off really easily using a butter knife or spoon), cut into large cubes and place into the vinegar mixture in the bowl. Stir to coat warm potatoes in marinating liquid. Cover and refrigerate at least 12 hours (up to 24 hours). Before serving, stir in mayonnaise (you can add less or more to your discretion). Keep cool until ready to serve.

This is a very easy make ahead type dish. Boiling the potatoes whole gives them a nice texture. Lots of flavor! This salad received many compliments. Thank you for sharing your Grandma’s recipe.

This is such a no frills recipe and yet it is packed with flavor. It is far different than the potato salad that I usually make, but I think I love it just as much. I got lots of compliments on it tonight and will make it again for sure!

I made this for the 4th of July and oh my. I have never been a big fan of potato salad b/c of the mustard and since this one has none, I thought I’d give it a whirl. OMG! Its sooo good. I could eat it while it was marinating before adding the mayo. It’s just THAT good and flavorful. Only thing I would change is to maybe peel the potatoes before hand next time b/c I had sticky starch ALL over my hands from peeling them after cooking. Otherwise, this is a delight on any picnic table. Bravo!
