Description

A great fresh recipe. It is a great recipe to make for a large group of people, and the added bonus is that making it well in advance is not only possible but probably even better!

Ingredients

  • 2 pounds, 3-⅓ ounces, weight Penne
  • 3 cans (5 Oz. Can) Tuna In Water
  • ½ pounds, ⅞ ounces, weight Diced Bacon
  • 1 bunch Spring Onions
  • 6 whole Pickles (medium Sized)
  • 1 whole Yellow Pepper
  • 1 cup Toasted Pine Nuts
  • 10 tablespoons, 7 pinches Buttermilk
  • 2 cups Mayonnaise
  • 1 Tablespoon Turmeric
  • 1 Tablespoon (roasted) Paprika
  • 1 bunch Dill
  • 1 bunch Flat-leaf Parsley

Preparation

1. Start with boiling the pasta. I leave it al dente.

2. Then start prepping all the other ingredients. Drain the tuna, fry the bacon untill they are crispy and let them drain on a piece of kitchen paper. Toast the pine nuts in a dry pan untill they are golden brown. Slice the spring onions, and dice the pickles and the pepper.

3. Then make the dressing: combine the buttermilk and the mayonnaise with the chopped dill and flatleaf parsley. Add the paprika and turmeric and mix well. Then season to taste. Make this dressing your own by adding spices that you love and keep tasting untill you have completed the perfect mixture. The buttermilk makes it very fresh and less fatty.

4. Then add the cooked pasta to a large pan and add the tuna, bacon, pickles, pepper, spring onions. Then add half of the dressing to the pasta and mix well. Then leave to combine for 30 minutes.

5. After 30 minutes, stir the pasta and add the other half of the dressing. Then leave it for at least another 30 minutes before eating.

6. I usually make some more dressing afterwards to serve with the pasta in case it becomes dry. Serve the pine nuts on the side, so they don’ t get too wet.
