Creamy, spicy, and delicious! A spin on a pasta salad I used to buy at Whole Foods. Yum!
Cook pasta until done. Drain and rinse in cold water until no longer hot. Set aside.
Mix mayonnaise, milk, vinegar, salt, pepper, and adobo in a small bowl.
In a large bowl, stir together pasta, dressing, halved tomatoes, and cubed Gouda. Taste for seasonings, adding more salt and pepper if needed, and even an extra teaspoons or two of vinegar if necessary. Stir in basil at the end. Refrigerate for a couple of hours before serving.
Divine.

Smoked Gouda is my favorite cheese and I am always happy to find a recipe with it as an ingredient. Thanks for sharing

I made a variation on this tonight and it was SO GOOD. My partner doesn’t like smoked flavors, so I used Pesto Gouda instead of Smoked Gouda and skipped the chile sauce. I also used diced regular tomatoes instead of grape tomatoes. Finally, instead of cooling the pasta I made it with the pasta warm, and I melted some of the cubes of Gouda into the pasta before mixing it altogether. YUM.

I added Vidalia onion and a couple of pinches of sugar to the dressing. Was very good!

I made this tonight. Used small bow tie pasta, chopped regular tomatoes, added a little minced onion, chopped avocado, shaved parmesan cheese and diced smoked gouda. Was really good. Probably be even better tomorrow. Made the same dressing, but no basil.
