Description

The utensil-less outdoor party salad solution! On some skewers I stacked chunks of iceberg lettuce, a cucumber slice, and a cherry tomato. Spinach, red onion, and strawberries adorned others.

Ingredients

  • FOR THE ICEBERG SKEWERS:
  • 1 head Iceberg Lettuce, Sliced Into 1 Inch Round Slices And Quartered
  • 1 whole Cucumber, Sliced Into 1/2 Inch Slices And Halved
  • 12 whole Cherry Tomatoes
  • FOR THE SPINACH SKEWERS:
  • 4 cups Baby Spinach Leaves
  • 6 whole Strawberries, Halved Lengthwise
  • ½ whole Red Onion, Chopped Into 1 Inch Pieces

Preparation

For the iceberg skewers, stack lettuce wedges, one slice of cucumber, and one cherry tomato onto a wooden skewer. Serve with my Perfectly Light Homemade Buttermilk Ranch Dressing (see my TK recipe box).

For the spinach skewers, stack 2 slices red onion, 12 spinach leaves and 1 slice strawberry onto a wooden skewer. Serve with my Maple Balsamic Viniagrette (from my Harvest Salad recipe, also here in my TK recipe box).

Some people may dress their skewer and eat it right off of the stick. Others may remove the salad from the skewer onto their plate and eat it with the stick. Either way works!
