Description

A festive kale salad with pomegranates, oranges, pine nuts, and goat cheese!

Ingredients

  • FOR THE DRESSING:
  • 1 Tablespoon Pomegranate Seeds
  • 1 Tablespoon Orange Zest
  • 1 Tablespoon Fresh Orange Juice
  • 1 Tablespoon Balsamic Vinegar
  • 1 Tablespoon Olive Oil
  • Salt To Taste
  • FOR THE SALAD:
  • ½  Valencia Orange, Peeled, Segments Chopped
  • 2 cups Kale, Chopped
  • ½ cups Pomegranate Seeds
  • 2 Tablespoons Pine Nuts, Lightly Toasted
  • 1 ounce, weight Goat Cheese Crumbled

Preparation

For the dressing:
Smash the pomegranate seeds to release the juices and then discard the seeds. Add orange zest and juice to the pomegranate juice. Add balsamic vinegar, olive oil, and salt, and mix well.

For the salad:
Combine the chopped orange segments, kale, pomegranate seeds, pine nuts, and goat cheese in a bowl and mix well.

Drizzle with dressing and enjoy!
