Description

A healthy salad filled with sweet carrots and apples and topped with a delicious yogurt dressing. A perfect side dish for dinner or brunch!

Ingredients

  • 2 whole Carrots, Shredded
  • 2 whole Apples, Peeled, Cored, And Diced
  • 1 stalk Celery, Diced
  • ¼ cups Golden Raisins
  • ¼ cups Pecans, Toasted And Chopped, Optional
  • ⅓ cups Plain, Non-fat Greek Yogurt
  • ¼ teaspoons Orange Zest
  • 3 Tablespoons Orange Juice, Freshly Squeezed
  • 1 teaspoon Honey
  • ⅛ teaspoons Cinnamon

Preparation

In a large bowl toss together the shredded carrots, apples, celery, raisins and pecans.

In a small bowl whisk together the yogurt, orange zest, orange juice, honey and cinnamon. Pour the dressing over the salad and mix until everything is coated.

Notes:
- This salad is best served and eaten in the same day.
- If you are planning to make the salad more than an hour in advance, wait to add the pecans so that they stay crunchy.
