Description

Avocado, black bean and corn salad with lime cilantro dressing!

Healthy, delicious and fresh!

Perfect for the summer!

Ingredients

  • 1-½ cup Frozen Sweet Corn
  • 1 can (15 Oz. Size) Black Beans
  • 2 whole Small Roma Tomatoes
  • 2 whole Small Avocados
  • ½ cups Red Onion
  • 3 whole Juice Of Limes
  • 1-½ teaspoon Olive Oil
  • 1 bunch Cilantro, Chopped, Use As Much As You Like
  • 1  Salt And Pepper, to taste

Preparation

For the salad:
1. Thaw out corn.
2. Rinse your black beans and put them into your serving bowl.
3. Put corn over beans in bowl.
4. Chop tomato and add it over the corn.
5. Dice avocado and add into the mix.
6. Chop half of a red onion and poor it over the avocado.
7. Admire the pretty colors!!

Dressing:
1. Squeeze the three limes with all your might and put the juice into a bowl.
2. Add in 1 ½ teaspoons of olive oil.
3. Put in a few leaves of cilantro.
4. Add pepper and salt to taste
5. Whisk together.
6. Pour over salad.
7. Serve and enjoy!

You can sub out the onion for cucumber… very good!!
