I just made this tonight and WOW! It is really outstanding. Seriously, seriously good.
First up: It’s HUGE. Lots and lost of salad. This is good because I ate two helpings. HA! We have some left over, but not a whole lot. (family of 4 and we all had seconds.
Second: I WAS going to add some turkey to this (or chicken) but at the last minute decided to just have the cashews for the protein. I’m glad I did because the flavors were so rich and fresh tasting this way. Don’t skimp on those cashews, by the way! They were excellent.
Third, and lastly: I used Ramen noodles for the noodlies. And I forgot to grab a lime at the store so I used some lemon zest instead. These are the only substitutions I made and I don’t think they altered the original recipe in flavor very drastically- but they worked well if you find yourself in a similar situation as I was in. (mainly- I didn’t want to drive back to the store for a lime.

I have made this many times. I love, love, love it! I use the dressing recipe for simpler green salads and for marinades. Many times I don’t have all the ingredients but any combo will do. Please make this!

I agree: this is an AMAZING salad. So tasty and fresh. I’ve brought it to several parties and gotten rave reviews. But like others have said, it makes a ton. Ihave to save it for parties, because it’s not really a recipe for just a single person.

This salad is incredible, and I am not a “salad person”! Even 2 teenage boys went back for seconds (and thirds). It makes a ton though, you’ll need a really large platter to mix and serve!

This makes wayyyyyy more than 6 servings (not that I’m complaining at all because this is super delicious!). My fiance makes this salad for parties now since it’s such a crowd pleaser.

I make this for my lady gatherings all of the time – always to rave reviews! I usually make chicken sate skewers with peanut sauce to accompany it…mix a little of the peanut sauce in with the salad – it is delightful!!!

Love, love, love this salad! Even my husband asks for this and he is a total meat and potatoes man! It is so versatile and easy to suit to your own taste.
