Description

The perfect Summer combination of tangy feta, fragrant mint, spicy arugula and juicy melon.

Ingredients

  • ¼ cups Lemon Juice
  • ¼ cups Orange Juice
  • ½ cups Olive Oil
  • ¼ cups Shallot, Minced
  • 1 Tablespoon Agave
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • 6 cups Arugula
  • ¼ whole Watermelon, Cubed
  • ½ cups Feta, Crumbled
  • 1 cup Mint Leaves, Julienned

Preparation

Whisk together the orange juice, lemon juice, oil, shallots, agave, salt, and pepper.

Place the arugula, watermelon, feta, and mint in a large bowl. Drizzle with vinaigrette to coat the greens lightly and toss well.

Love this salad – the watermelon and juices make it very refreshing. The dressing is great. Next time I’ll cut the Arugula. The leafs are big and make it awkward to chew. A quick little chop will make it easier to eat, even if it’s not as pretty. The mint is a nice touch – like the Feta too but I’m sure it would taste well without also. Will make this again!
