This is my take on Chicken Salad Veronique. It’s full of fresh ingredients and packs a flavorful punch. Makes a delicious sandwich or dip for crackers.
1. Cut chicken breasts into bite-sized cubes.
2. In large bowl, combine chicken, onion, celery, grapes, cashews and parsley.
3. In small bowl or measuring cup, whisk together mayonnaise, vinegar, sugar, salt and pepper.
4. Pour dressing over chicken and toss to coat.
Store in the fridge until ready to eat. I find the flavor more appealing after I’ve let it sit for 30 minutes or so. Enjoy!
