Description

A combination of lettuce, cheese, nuts, fruit with a sweet-tart dressing is sure to become a favorite. Most of this salad can be prepared ahead of time and assembled at the last minute.

Ingredients

  • ½ cups Sugar
  • ⅓ cups Lemon Juice
  • 1 teaspoon Dijon Mustard
  • ⅔ cups Vegetable Oil
  • 1 head Romaine Lettuce
  • ⅔ cups Shredded Mozzarella Cheese
  • 1 cup Unsalted Cashews
  • ¼ cups Dried Cranberries
  • 1 whole Pear, Peeled, Cored And Cubed
  • 1 whole Apple, Peeled, Cored And Cubed
  • 1 Tablespoon Poppy Seeds

Preparation

Combine the sugar, lemon juice, Dijon mustard and vegetable oil in a container with a tight fitting lid. Set aside. Wash and cut the Romaine lettuce into small bite sized pieces and place into a large bowl. Shred the mozzarella cheese and set aside.

Just before serving, peel and cube the pear and apple (I use Gala) into 1/2-inch cubes. Top the lettuce with cheese, cashews, cranberries, pear cubes, apple cubes and sprinkle with poppy seeds. Shake the dressing ingredients to combine and pour as much as desired over the top of the salad. Toss lightly and serve immediately.

This salad is DELICIOUS!!!!!!! I made it for a church potluck and it was gone! It makes a beautiful presentation.

I added some spinach leaves in with my romaine lettuce.

The only thing that I didn’t like was that the dressing was too oily. I had to add more lemon juice, sugar and dijon to compensate for it. I will use 1/2 cup next time instead of 2/3.

The recipe for the dressing is more than enough for two salads.

I usually make this salad with swiss cheese and it is delicious! My family’s favorite. For beautiful presentation – place the lettuce on a clear glass plate, sprinkle all toppings except unpeeled pears and apples, slice those thinly and place on top – drizzle with dressing. Beautiful and yumm-o.
