As easy as it is beautiful and delicious, this southwestern-inspired watermelon salad will be a welcome addition to your summer menus!
Remove rind from watermelon and cut flesh into six 3″x3″x1-1/2″ squares. Place squares on individual serving plates.
Soak sliced onion in a bowl of ice water for about 5 minutes, then strain well.
Mix oil, lime juice and salt in a jar with a tight fitting lid. Shake well.
Distribute onion and cheese on top of watermelon squares. Drizzle with dressing, and garnish with cilantro.
