Description

Warm Arugula Salad is a perfect winter time meal that is comforting and healthy. It’s ideal for your healthy eating resolutions no matter your diet.

Ingredients

  • 1 whole Red Bell Pepper, Large Chopped
  • 1 whole Red Onion, Large Sliced
  • 2 whole Yellow Squash, Large Chopped
  • 3 whole Zucchini, Large Chopped
  • ¼ cups Olive Oil, Divided
  • 7 ounces, weight Arugula
  • 2 Tablespoons Red Wine Vinegar
  • 1 teaspoon Lemon Juice
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Granulated Garlic
  • 1 teaspoon Salt
  • 6 ounces, weight Crumbled Feta

Preparation

Preheat oven to 475ºF with the roasting pan in the oven.

Chop vegetables and add to preheated pan. Toss with 2/3 of the olive oil. Sprinkle with salt. Roast for 30 minutes, tossing halfway through.

Place arugula into large bowl. Once vegetables are done, let sit for 3 minutes and then place directly onto bed of arugula. Add remaining oil, red wine vinegar, lemon juice, oregano, garlic and salt and toss until arugula is fully wilted.

Salt to taste and add feta. Mix and serve.
