A fresh Turkish salad with mint, parsley and lemon.
1. Peel, seed and finely dice the cucumber. Mix with about 1/2 teaspoon salt, set aside.
2. Seed and finely dice the tomatoes. Finely chop the onions (green parts included). Roughly chop the parsley and mint.
3. Drain the cucumber from any excess water. Combine all the ingredients in a bowl, add lemon juice. Season with salt and pepper to taste. Serve immediately or refrigerate for 1 hour.
