Description

This fast, easy salad looks and tastes like you spent hours in the kitchen. It only uses 6 ingredients! It makes a great potluck dish especially during the holidays with the cherry tomatoes, spinach and tortellini.

Ingredients

  • 2 packages 9 Oz Each Cheese Filled Tortellini, Green And White
  • 1 bag Baby Spinach, Torn (More Or Less, To Taste)
  • ⅔ cups Grated Parmesan Cheese
  • 4 cups Cherry Tomatoes, Halved
  • 1 bottle Italian Style Salad Dressing
  • 1 jar Artichoke Hearts, Chopped

Preparation

1. In a large pot of salted boiling water, cook pasta al dente according to package directions; rinse under cold water and drain.
2. Chop artichokes.
3. In a large bowl, combine the tortellini, artichokes, spinach, cheese, and tomatoes. Add enough dressing to coat.
4. Salt and pepper to taste.

Note: I use Ken’s Northern Italian Dressing. Remember, the salad is only as good as the dressing you use.
