Description

A delicious, colorful salad, perfect for your holiday spread.

Ingredients

  • 1 clove Garlic, Finely Minced
  • 2 Tablespoons Fresh Squeezed Lemon Juice
  • ¼ cups Extra Virgin Olive Oil
  • ¼ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • 5 ounces, weight Baby Spinach And Arugula Blend
  • ½ cups Pomegranate Seeds
  • ⅓ cups Sliced Almonds

Preparation

Whisk together garlic, lemon juice, olive oil, salt and pepper. Let sit at room temperature for 30 minutes.

In a bowl combine spinach and arugula, pomegranate seeds, and almonds. Whisk the dressing once more and drizzle over salad. Toss to combine. Serve.
