Description

A pretty pasta salad with a delicious Cilantro Lime Dressing. Add some grilled chicken breast and have a complete meal.

Ingredients

  • FOR THE SALAD:
  • 1 package (9 Ounce) Tortellini
  • 8 ounces, weight Rotini Pasta
  • 1 can (15 Oz. Size) Corn, Drained
  • 1 can (15 Oz. Size) Black Beans, Rinsed And Drained
  • 1 whole Red Bell Pepper, chopped
  • 1 can (2.25 Ounce) Sliced Black Olives, Drained
  • 1 can (4-ounce) Can Diced Green Chilies, Drained
  • 1-½ cup Shredded Cheddar Cheese
  • 1 bunch Green Onions, Chopped (about 6 To 8)
  • 1 cup Chopped Tomatoes
  • FOR THE DRESSING:
  • ¾ cups Olive Oil
  • ¼ cups White Wine Vinegar
  • 2 Tablespoons Freshly Squeezed Lime Juice
  • ⅓ cups Picante Sauce Or Salsa
  • 3 Tablespoons Cilantro, Minced
  • 1 Tablespoon Dried Basil
  • 2 cloves Garlic, Minced
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • ½ teaspoons Freshly Ground Black Pepper

Preparation

Cook pasta according to package instructions and rinse with cold water. Drain and place in a large bowl. Add corn, black beans, red pepper, black olives, green chilies, cheese, green onions and tomatoes. Stir gently to combine.

In a small bowl whisk oil, white wine vinegar, lime juice, picante sauce, cilantro, basil, garlic, cumin, salt and pepper.

Pour dressing over salad and toss gently to combine. Refrigerate for 1 hour to let the flavors blend.

This is delicious. Thank you so much. A nice change of pace. I made it exactly as written, although omitted the olives because the family is not a big fan of them. This is the second time I’ve made this and is now my go-to pasta salad.

We had our neighbors over for burgers on the grill last night and I made this salad the day before. It was delicious! Everyone went back for second helpings! 3/4 cup seemed like quite a lot of oil so I only used about 1/2 cup and it was plenty. Thanks for sharing this great recipe!
