This is a pita chip version of Panzanella, which just so happens to be one of my favorite dishes in the world. Typically made with day-old French bread, Panzanella usually contains fresh tomatoes, sliced red onions, and any number of other ingredients. The crusty, dry bread (or, in this case, pita chips) soaks up some of the liquid from the tomatoes and the whole things turns into a hearty, delicious summer salad.
Combine pita chips, tomato wedges, onion slices, and Parmesan in a medium bowl.
Mix together oil and vinegar, add a dash of salt, and pour over ingredients.
Add lots of freshly ground black pepper and toss together to thoroughly combine.
Cover with a tea towel or plastic wrap and allow Panzanella to sit at room temperature for 30 minutes to 1 hour before serving to make sure the pita chips absorb the flavors.
Makes a fresh, filling summer salad!

This is my fav summer salad ever! I usually dont have parm cheese lying around when I toss this together, but I have added some dried cranberries, dried cherries, almonds, and pecans. This salad is a hit where ever I take it. I HIGHLY recommend it for any get together!
