Description

The tomatoes are the star of this salad! I used golden grape tomatoes, but red ones would be delicious too.

Ingredients

  • 1-½ cup Orzo Pasta, Uncooked
  • 1 pint Grape Tomatoes, Halved
  • ¼ cups Black Olives, Finely Chopped
  • ¼ cups Red Onion, Finely Chopped
  • ¾ cups Feta Cheese, Crumbled
  • FOR THE DRESSING:
  • ¼ cups Extra Virgin Olive Oil
  • 2 Tablespoons Fresh Lemon Juice
  • 2 Tablespoons Red Wine Vinegar
  • ½ teaspoons Dried Oregano
  • ½ teaspoons Salt
  • ⅛ teaspoons Fresh Ground Pepper
  • ½ teaspoons Sugar
  • 1 clove Garlic, Crushed

Preparation

1. Cook pasta according to package directions. Drain and transfer to a medium bowl. Set aside to cool.
2. Whisk dressing ingredients together in a small bowl. Pour over the cooled pasta and stir to combine.
3. Add the tomatoes, olives, red onion, and feta. Stir well to combine.
