Description

Delicious Mediterranean Pasta Salad with lovely fresh tomatoes and basil, which are in season, tuna, dairy-free cheese and a handful of black olives. It’s so simple to prepare, takes no time at all to make and you should have most, if not all, of the ingredients on hand.

Ingredients

  • 10-½ ounces, weight Fresh Tomatoes
  • 15 leaves Fresh Basil
  • 1 clove Garlic
  • 5-⅝ ounces, weight Canned Tuna In Olive Oil
  • 3-½ ounces, weight Dairy-free Cheese
  • 15  Black Olives
  • Extra-virgin Olive Oil As Needed
  • Salt And Pepper, to taste
  • 5-½ ounces, weight Brown Rice Pasta

Preparation

Wash fresh tomatoes and basil. Cut tomatoes into fairly small pieces and finely chop basil. Place them in a bowl.

Peel and finely chop garlic and add to the tomatoes.

Drain tuna. Cut dairy-free cheese into small pieces and add it, as well as the tuna, to the tomatoes. Chop black olives and add to the rest of the ingredients. Dress with extra virgin olive oil, salt and pepper. Set aside.

Cook pasta in salted water, according to package directions. Drain and rinse quickly in cold water to stop pasta from cooking further and from cooking the basil in the salad. Drain well and toss with tomato mixture. If you think you need to add a little extra oil, do so. It’s better to adjust the amount of oil now rather than having too much in the dressing.

Note: The amount of pasta in the recipe is for about 3 to 4 starter portions or 2 full portions for dinner.
