Description

Full flavored salad, perfect for parties. However, you need to plan ahead to let the vegetables marinate overnight. This recipe is also easily adaptable to whatever you may have on hand.

Ingredients

  • 2 whole Cucumbers Sliced
  • 28 ounces, weight Artichoke Hearts, Drained And Chopped
  • 1 pint Grape Tomatoes
  • ¾ bottles (16 Oz. Bottle) Balsamic Viniagrette
  • 1 head Romaine Lettuce Washed And Chopped
  • 8 ounces, weight Blue Cheese, Crumbled
  • 1 package (3.5 Oz. Package) Sliced Honey Roasted Almonds

Preparation

1. Place cucumbers, artichoke hearts, and grape tomatoes in a bowl.
2. Pour the vinaigrette over the vegetables and stir to coat well.
3. Cover and marinate in the refrigerator overnight.
4. When ready to serve, place the salad greens into a large bowl, or on a large platter.
5. Sprinkle with blue cheese crumbles and almonds.
6. Pour the marinated vegetables over top and toss to combine together.
