A wonderful and refreshing salad that makes a delicious and healthy lunch for spring!
In a small bowl, combine honey, olive oil, lime juice, lime zest, garlic and salt. Stir well and set aside.
Cut avocado in half, remove stone and cut into slices lengthwises. Cut mango into bite size pieces.
In a salad bowl, toss lettuce, avocado, pumpkin seeds and cashew nuts. Drizzle over the dressing, toss and serve immediately.
