Description

This the best macaroni salad I’ve ever had. It’s my mom’s recipe and everyone requests it. Even my in-laws have begun making it instead of their old recipe. You won’t be disappointed if you try this one!

Ingredients

  • 1 box Elbow Macaroni (1 Pound)
  • 1 whole Small Onion, Chopped
  • 2 stalks Celery, Chopped
  • 4 whole Hard Boiled Eggs, Chopped
  • Paprika
  • 1-½ jar Marzetti's Original Cole Slaw Dressing (16 Oz Each)
  • 4 whole Hard-boiled Eggs, Sliced

Preparation

This recipe isn’t exact. I guessed on the amounts. I never really measure. I just add in what looks good. Don’t leave out any ingredients — even if you don’t like them. It won’t be the same. Just pick them out.

Cook the macaroni according to the directions on the box.

While it cooks, chop your onions, celery, and eggs.

When pasta is cooked, drain. While it is still warm add the cole slaw dressing, onions, celery, chopped eggs, and a sprinkling of paprika. Mix together.

Place salad in your serving bowl. Smooth out the top and place the sliced eggs on top. Sprinkle lightly with paprika.

I really like this when it’s still warm but most people eat it cold.
