Description

This is so simple it’s embarrassing but it is super delicious and everyone will love it! It’s a staple in our house and often served at our get togethers. Plus, left overs are good cold or added into other dishes or smothered in a sauce of your choosing.

Ingredients

  • 8 pieces Boneless, Skinless Chicken Thighs (about 8 Thighs)
  • Olive Oil
  • Salt
  • Pepper

Preparation

Preheat your grill to medium-high. Remove any visible fat from chicken. Drizzle oil onto chicken and rub it in. My husband uses less than I do. I like a little more because it makes the chicken all crispy and yummy. Season with salt and pepper. That’s it. Now you just grill them up for 3-5 minutes a side, until they are done but still moist and juicy. Unbelievably good! I promise!!

I made this because I had chicken in the freezer and not much else. The only difference I did was mixed a small bowl of olive oil, S&P, garlic, basil, chives, and rosemary (because I have fresh herbs right now) and placed the mixture in between the skin and meat. It took me a long time to gril them to get the skin crisp, but it was really good and easy. Thanks for the post.
