Description

Potato salad with all the fixins’.

Ingredients

  • 6 whole Yukon Gold Or Red Potatoes
  • 6 whole Spring Onions (or Green Onions Or Scallions, Whatever You Call Them)
  • 6 slices Crispy Bacon, Crumbled
  • ½ cups Mayonnaise
  • ½ cups Sour Cream
  • 1 Tablespoon Dijon Mustard

Preparation

Boil the whole potatoes until fork tender and cool completely in the fridge overnight.

When potatoes are cold, with your hands, break up the potatoes into bite-sized pieces.

Mix together mayo, sour cream, mustard, salt and pepper to taste.

Toss potatoes, sauce, onions and bacon together, reserving a small handful of bacon and spring onions for garnish.

Taste-test, adding salt and pepper as necessary.

When seasoning is complete, garnish with reserved bacon and green onion.

I tried this today and it was great. It was so simple to make. My husband really liked as well which means I’ll definitely be making it often.
