Kale Slaw with Thai Peanut Dressing

Description
Tasty slaw of kale, red cabbage and carrots tossed with a a tangy peanut dressing.
Ingredients
- 4 cups Kale, Washed And Chopped
- 1-½ cup Red Cabbage
- 2 Carrots
- 2 Tablespoons Cilantro
- 2 Tablespoons Natural Peanut Butter
- 2 Tablespoons Low Sodium Soy Sauce
- 1 clove Garlic
- 1 Tablespoon Raw Ginger (minced)
- ½ Lime, Juiced
Preparation
1. Toss kale, cabbage, carrots and cilantro together.
2. In a food processor, combine peanut butter, soy sauce, garlic, ginger and lime juice.
3. Toss dressing with salad and serve.
