K-Dub’s Chopped Salad

Description
A light refreshing salad. Good for you and tasty!
Ingredients
- 1 head Romaine Lettuce, Rinsed And Chopped
- 1 can Red Kidney Beans, Drained
- 1 can Garbanzo Beans, Drained And Rinsed
- 1 whole Cucumber, Peeled And Diced
- 2 whole Roma Tomatoes, Diced
- ¾ cups Monterey Jack Cheese Cubed
- ¾ cups Medium Cheddar Cheese, Cubed
- ½ cups Balsamic Vinegar
- 2 teaspoons Dijon Mustard
- 1 cup Extra Virgin Olive Oil
- Salt And Pepper, to taste
Preparation
Toss all salad ingredients together in a salad bowl.
In a separate bowl, mix together the balsamic vinegar and mustard.
Slowly whisk in the olive oil and season with salt and pepper.
Toss the salad with the vinaigrette and serve.
