Description

Pasta salad without the mayo!

Ingredients

  • 4 cups Rotini Noodles
  • 2 cups Cooked Vegetables, Chopped
  • ½ cups Ranch Dressing
  • ½ cups Newman's Lite Italian Dressing
  • ½ cups Cherry Tomatoes, Halved
  • Sea Salt And Pepper, To Taste
  • ¼ cups Green Olives Stuffed With Almonds
  • ¼ cups Feta Cheese, Crumbled

Preparation

Cook the pasta noodles according to instructions on the box and drain.

Stir in cooked vegetables (broccoli, asparagus, carrots, and cauliflower are great – you can use leftover cooked veggies or you can use frozen and just cook according to the package).

Add both dressings to the mix along with the tomatoes, salt, pepper and olives.

Refrigerate for at least three hours and then top with feta cheese before serving.

needed something cool for our freak hot winter weekend. This was just the ticket, cool and tasty. I just put the veggies in raw, after dicing them all tiny.
