Description

Pair these grilled peaches with your favorite session IPA and welcome summer with the ultimate pairing!

Ingredients

  • 4 whole Firm Peaches, Halved With Pits Removed
  • 1 Tablespoon Extra Virgin Olive Oil
  • ¼ teaspoons Salt
  • ⅛ teaspoons Pepper
  • 4 cups Arugula
  • 2 Tablespoons Honey
  • 1 teaspoon Lemon Juice
  • ¼ teaspoons Fresh Thyme Leaves
  • ¼ cups Walnuts
  • 2 ounces, weight Chèvre (Young Goat Cheese)

Preparation

Preheat outdoor grill to high heat. Cut peaches in half and remove pits, making sure none of the pit gets stuck to the peach. Brush the cut side with olive oil, and season with salt and pepper. Grill for 3–5 minutes, rotating the peach by a quarter halfway into the cooking time to get criss-cross grill marks. Once you have nice grill marks, remove from heat.

Arrange arugula on a platter, and top with peaches, cut side up. Drizzle peaches with honey and lemon juice, then sprinkle with thyme, walnuts, and chèvre. Serve family style with your favorite summer IPA.

Note: This can be served as a large salad for two people, a side for 4 people, or a snack for 8 people.
