Greek Salad with Tzatziki Dressing

Description
A super simple salad that is a great addition to any summer gathering, barbecue, or party!
Ingredients
- FOR THE TZATZIKI:
- 2 cups Greek Yogurt
- 1 whole Cucumber, Peeled And Diced
- 3 cloves Garlic, Crushed
- ¼ cups Fresh Lemon Juice (aprx One Lemon)
- 2 Tablespoons Fresh Dill, Roughly Chopped
- 1 teaspoon Sea Salt
- 2 Tablespoons Olive Oil
- FOR THE SALAD:
- 3 cups Baby Leaf Lettuce
- 1 pint Cherry Tomatoes, Halved
- 1 cup Pitted Black Olives
- 1 cup Feta Cheese, Cut Into Cubes
- ½ whole Red Onion, Halved And Thinly Sliced
Preparation
Combine tzatziki ingredients in a food processor and mix on high until it is blended well. Transfer to a serving dish, cover and refrigerate for about 1 hour.
Toss together all the salad ingredients and serve the tzatziki on the side.
