Description

Loaded with bright, spring veggies, coated in a puckery Greek dressing and sprinkled with crab and feta, this is not your momma’s pasta salad.

Ingredients

  • FOR THE SALAD:
  • 8 ounces, weight Rotini Pasta
  • 2 heads Broccoli, Chopped Into Small Florets
  • ½  Red Bell Pepper, chopped
  • ½  Orange Bell Pepper, Chopped
  • 2  Small Zucchini, Sliced
  • 4 ounces, weight Grape Tomatoes, Halved
  • 2  Green Onions, diced
  • 8 ounces, weight Imitation Flake Crab, Chopped
  • 4 ounces, weight Feta Cheese
  • Optional For Garnish: Chopped Green Onions And Feta Cheese Crumbles
  • FOR THE DRESSING:
  • ½ cups Olive Oil
  • ½ cups Red Wine Vinegar
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Oregano
  • 1 teaspoon Dried Basil
  • ¾ teaspoons Black Pepper
  • ¾ teaspoons Salt
  • ¾ teaspoons Onion Powder
  • ¾ teaspoons Dijon Mustard

Preparation

Cook the pasta according to package directions. Drain and rinse with cold water to stop the cooking.

Throw the pasta, all the veggies, the crab, and the feta cheese together in a large bowl. Toss to combine. Set aside for a moment.

In a jelly or jam jar, combine all the dressing ingredients. Screw the lid on extra tight and shake for about 2 minutes or until well combined. Pour over the salad ingredients and stir to coat.

Chill until ready to serve. Sprinkle with additional feta or green onions before serving, if desired.

Excellent recipe. This made a fantastic salad that we shared with company. This time of year we are trying to find fresh dishes that showcase the crab we catch and the veggies we grow–Win, win!

This was awesome!! I used a little less zucchini and added more pasta and feta, just because our family isn’t quite THAT healthy. And everyone ate it… the whole huge bowl of it. It was so delicious and pretty too! Definitely making for guests next time.
