Description

This is the perfect salad to make during the busy holiday season when you want something quick and healthy. Add grilled chicken or shrimp and you have a whole meal. Here’s a tip–use your mandoline to thinly slice the cheese. It’s much easier than using the side of a box grater.

Ingredients

  • 1 bag Fresh Baby Arugula, 10-12 Ounce
  • 1 can (15 Oz. Size) Beans, Rinsed And Drained
  • 1 whole Lemon
  • 1 whole Block Of Parmesan Cheese, Shaved Into Thin Slices, Use As Much As You Want
  • 1 Tablespoon Extra Virgin Olive Oil (more If Needed)
  • Cracked Black Pepper, To Taste

Preparation

Clean your arugula in a salad spinner. Put it into a serving bowl.

Add rinsed and drained cannellini beans.

Top with shaved Parmesan cheese and squeeze the juice of 1/2 or a whole lemon over the top, depending on the size of your salad.

Drizzle with olive oil and grind black pepper on top. What could be easier? It’s simple and refreshingly good.
