Description

Orecchiette, sweet onions, cucumbers and crumbly feta are tossed in a Dijon Dill dressing. Simple, light and refreshing.

Ingredients

  • ¼ cups Dijon Mustard
  • ¼ cups Extra Virgin Olive Oil
  • 2 Tablespoons Apple Cider Vinegar
  • 1  Lemon, Juiced
  • 1 Tablespoon Grated Romano Cheese
  • 1 teaspoon Fresh Dill, Chopped Plus Additional For Garnishing
  • 1 clove Garlic, Minced
  • 1 pound Orecchiette Pasta, Cooked According To Package Instruction For Al Dente
  • ⅓ cups Sweet Onion, Chopped
  • ⅓ cups Cucumber, Peeled And Chopped
  • ⅓ cups Crumbled Feta Plus Additional For Garnishing
  • Salt And Pepper

Preparation

In a large bowl combine Dijon mustard, extra virgin olive oil, apple cider vinegar, lemon juice, Romano cheese, dill and minced garlic and whisk together until blended. Add in pasta, onion, cucumber and feta and toss with dressing until combined. Season with salt and pepper and chill until ready to serve.

Garnish with additional feta and dill.

I loved this pasta! The flavors are cool and refreshing. You only have to cook the pasta, so it is perfect for this time of year when making toast is unbearable! Thanks it will become a staple in our kitchen.
