Description

Delicious and refreshing. My husband’s favorite!

Ingredients

  • 1 package Ramen Noodles
  • 1 cup Chopped Walnuts
  • ¼ cups Butter
  • 1 cup Brown Sugar, To Taste
  • 2 bags Romainen Lettuce Or 50% Baby Spinach Mix
  • ½ cups Chopped Green Onions
  • 2 cups Fresh Strawberries (or More) Sliced
  • FOR THE DRESSING:
  • ¼ cups Vegetable Oil
  • 2 Tablespoons Red Wine Vinegar
  • ½ teaspoons Soy Sauce
  • ¼ cups Sugar

Preparation

Break ramen noodles into small pieces. In a frying pan, saute noodles and walnuts in butter and dump about a cup of brown sugar. Coat and stir until golden brown. Set aside and let cool. Mix dressing ingredients (oil, vinegar, soy sauce and sugar). Put in fridge until right before serving the salad. In a bowl, layer spinach mix, green onions, strawberries, and cooled walnut mixture. Right before serving, mix together and pour dressing on top!! Yummy!
When I got the recipe from a friend it said to use Romaine, so I tried that, but later tried the 50% baby spinach mix and I loved it. So do whatever you like!!

Made this yesterday for my daughter’s 2nd birthday party. It was a hit for sure!! Had many requests for the recipe!! Thanks for sharing!

Loved it! Simple and delicious. The brown sugar added to the noodle/nut mixture was really tasty, although I probably only added 1/2 cup instead of a full cup.
