My go-to slaw recipe of late is a super crunchy Brussels sprout slaw that’s full of flavour, lightly dressed, and makes a pretty side. It’s loaded with apples, crushed cashews, sunflower seeds, dried cranberries, and fresh chives and topped with a creamy but light lemon tahini dressing.
In a large mixing bowl, combine thinly sliced Brussels sprouts with cashews, sunflower seeds, chopped apple, cranberries, and chives.
In a small Mason jar, add olive oil, mayonnaise, tahini, honey and lemon juice. Shake vigorously until smooth and creamy.
Stir dressing into slaw until well combined. Add salt and pepper to taste. Enjoy!
