Description

Baby spring greens, dried cranberries, a crumble of tangy goat cheese, toasted walnuts smothered with homemade fresh Dijon vinaigrette dressing. The perfect light complement to your heavy Thanksgiving meal!

Ingredients

  • 6 cups Baby Greens Spring Mix
  • ½ cups Goat Cheese Crumbled
  • ½ cups Dried Cranberries
  • 1 cup Walnuts, Toasted
  • 1 whole Shallot Finely Minced
  • 1 teaspoon Dijon Mustard
  • 2 teaspoons Red Wine Vinegar
  • ¼ cups Olive Oil
  • 1 teaspoon Sugar
  • 1 Tablespoon Honey
  • 1 dash Salt
  • 1 dash Pepper

Preparation

Put spring mix in a bowl. Crumble goat cheese over it. Sprinkle on cranberries. Place walnuts on a plate and microwave for 90 seconds. In a separate bowl or mason jar, whisk or shake together remaining ingredients. Pour dressing over the salad and toss.

Sooo Good!! I made this for Thanksgiving dinner at a friends, everyone loved it and asked for the recipe! The only thing I changed was, I used Blue Cheese instead BUT only because I couldn’t find Goat Cheese, it was still delicious!! FAST, EASY & YUMMY!

Very tasty. I made mine with all spinach and reduced the olive oil to 3TB. Made it for a party and everyone loved it.
