Perfect summer salad – quick, simple and good.
Throw in some chicken for an easy weeknight meal.
Cook linguine.
While pasta is cooking, toast sesame seeds. Put seeds in single layer in pan. Cook over medium heat for 3-4 minutes, shaking pan every 20 seconds. Seeds will turn light brown color when toasted. Be careful, they can easily burn.
Once pasta is cooked, rinse in cold water to cool off.
Add sesame oil (or any other preferred oil) to pasta and stir. Add in sweet chili sauce to taste. Add in cheese and toasted sesame seeds.
Serve.
Pasta is also good with addition of vegetables and chicken. It may need to more oil or sweet chili sauce if you store in fridge.

I needed to bring a pasta salad to a gathering where many of the folks were picky about veggies and other quirks. This ended up being so easy and everyone loved it! This probably sounds weird, but I added a touch of mayonnaise to give it some creaminess. It was a hit!

Can’t wait to make this after the holidays, after the heavy dishes are eaten and I want something quick and cold and good!
