Description

A tasty one dish meal that’s perfect for warm days! If you don’t have a Caesar dressing that you love, try the one in my recipe for Kale Caesar Salad (Vegan).

For the green part of this salad, I prefer to use kale or chard, but if those are intimidating to you, you can always use romaine lettuce, tossed in just before serving.

Ingredients

  • ½ pounds Pasta (bow Tie, Rotelle, Etc)
  • 1-½ cup Halved Cherry Tomatoes
  • ½ cups Fresh Basil, Chopped
  • ½ cups Green Onion, Chopped
  • ½ cups Parsley, Chopped
  • 1 clove Pressed Garlic
  • 4 ounces, weight Blue Cheese (Feta May Be Substituted)
  • 3 cups Cooked, Cubed Chicken
  • ½ cups Caesar Dressing (more As Needed)
  • 2 cups Thinly Sliced Greens (kale, Swiss Chard Or Romaine)

Preparation

Cook your pasta, drain and rinse with cold water. Put in a large bowl. Add all the other ingredients and toss to mix well. If prepping ahead, mix and chill with everything but the greens. Toss them in just before serving.

This is a great meal for a warm summer evening! It is great with any Caesar dressing, but the dressing in her Kale Caesar recipe is the best.
