Description

This sweet and healthy quinoa dish pairs perfectly with summer BBQ. Or make it a filling lunch by adding chopped cooked chicken breast.

Ingredients

  • 1 cup Quinoa, Cooked To Package Directions And Cooled
  • 1 can (14 1/2 Oz. Size) Chickpeas, Drained And Rinsed
  • ½ cups Chopped Celery
  • ¼ cups Chopped Green Onion
  • 1 cup Cherries, Pitted And Halved
  • ¼ cups Slivered Almonds
  • 1 Tablespoon White Wine Vinegar
  • 1 Tablespoon Extra Virgin Olive Oil
  • 2 Tablespoons Honey
  • 1 teaspoon Quality Pure Vanilla Extract (imitation Is Not Recommended )

Preparation

Combine cooled quinoa, chickpeas, celery, green onion, cherries and almonds in a large bowl.

In a small bowl, whisk together vinegar, oil, honey and vanilla extract. Pour over the other ingredients and toss. Refrigerate until ready to eat.
