Description

This healthy and hearty soup can be made in the crockpot or Dutch oven and features a kick of Cajun flavor without overwhelming spiciness.

Ingredients

  • 4 cups Chicken Broth
  • 2 cups Cooked Quinoa
  • 2 cans (15 1/2 Oz. Size) Black-Eyed Peas, Drained And Rinsed
  • 1 can (14 1/2 Oz. Size) Fire Roasted Tomates
  • 1 pound Smoked Sausage, Sliced
  • ½ whole Medium Onion
  • 2 teaspoons Paprika
  • ½ teaspoons Garlic Powder
  • ½ teaspoons Black Pepper
  • ½ teaspoons Thyme

Preparation

Combine all ingredients in a crockpot or Dutch oven. For a crockpot, cook on low for 3–4 hours; in a Dutch oven, simmer over medium-low heat for 1 hour.
